Raw Cashew Nuts

[ms_dropcap color=”#b99a31″ boxed=”yes” boxed_radius=”15px” class=”” id=””]C[/ms_dropcap]ashews are the number one crop in the world (after almonds) and considered third in consumption among all the tree nuts in the world. It is cultivated in more than 30 countries.

Africa is the centre of the cashew world, producing over 40 per cent of 2.6 million tonnes of the world’s cashew nuts with Nigeria standing as one of the largest cashew producers in the continent alongside Ivory Coast, Guinea Bissau, Tanzania, Ghana, Kenya, Mozambique and recently Mali.

Cashews require a hot, humid climate to proliferate, which is why India, Brazil, Mozambique, Tanzania, and Nigeria are the largest raw cashew producers. Cashew plants don’t begin to bear nuts for three to five years, and then another eight to 10 weeks is needed to develop them to full maturity. The tree bears numerous, edible, pear shaped false fruits or “accessory fruits’” called “cashew apples.” Cashew nut which actually is a “true-fruit”, firmly attaching to bottom end of cashew-apple, appearing like a clapper in the bell. Botanically, this tiny, bean shaped, grey “true fruit” is a drupe, featuring hard outer shell enclosing a single edible kernel known commercially as “cashew nut.”

Its exterior shell composes a phenolic resin, urushiol, which is a potent caustic skin irritant toxin. In the processing units, this outer shell is roasted under high flame in order to destroy urushiol resin, and only then underlying edible cashew kernel is extracted.

Cashew nut measures about an inch in length, 1/2 inches in diameter, and kidney or bean shape, with smooth curvy pointed tip. Each nut splits into two equal halves as in legumes. Cashews feature cream white colour with the firm yet delicate texture and smooth surface.

Cashew nuts are abundant sources of essential vitamins and minerals. Consumption of cashews has been linked to cancer prevention, improving cognitive ability, heart health, and weight maintenance. The nuts contain zero cholesterol. All but a small amount of the fat in cashews is the good kind – oleic acid – found also in olive oil, which is the reason both are so good for you.

A great mineral source, cashews contain 31% of the daily recommended value for copper, along with 23% for manganese, 20% for magnesium and 17% for phosphorus,add to that 12% of the daily recommended value for vitamin K.
